Weekly Roundup



The plan is to post all my meals for the past week every Saturday. Knowing me, however, it’s more likely that I’ll actually get around to posting it on Sunday, and there are bound to be gaps, but I’ll give it a shot. Since I’ve just started today, this week’s roundup will be a short one.


Lunch – 3 eggs cooked in butter, 1/2 avocado, a few splashes of Texas Pete’s (what I like about this meal is that it has sufficient fat from the egg yolk and avocado with a little bit of butter that clung to the eggs from cooking. I did not add any additional fat. The idea is that I want my body to use it’s own fat for fuel as much as possible. The trick, I think, is not to be afraid of using fat, but not to add too much.)

Dinner – Burger patty with broccoli, green beans, butter. (This is a good dinner. Lots of veg, enough fat to make the veggies taste good, but low enough to give my body a chance to use its own fat.)

Snacks – 2 boiled eggs with butter. Kippered herring. Swiss cheese. (All on plan, although I was getting dangerously close to mindless eating/grazing. Why am I so hungry at night?)

Oh, almost forgot…. also 4 large cups of coffee with sweet n low and heavy cream.




Raliegh NC

Wow, we made it to Raleigh!. The weather was fine until we hit NC around Winston Salem, then we knew we were in a hurricane! The winds weren’t that bad, but the rain was torrential. I kept expecting to see the road closed ahead, but we were lucky and made it all the way to our hotel in Raleigh. I understand that I40 is closed just south of here, hope they have it open later in the day. We’re not sure yet if the roads are passable to Topsail, or even if our hotel on Topsail is open. Will call later and find out.

We ate at a pretty nice place near our hotel called Page Road Grill, which advertised itself as Southern cuisine with an international flair. I had a delicious smoked brisket with sweet potato hash, grilled broccoli, barbeque demi and mustard sauce. I’m sure there was sugar in the sauce, but the sweet potatoes had no added sugar (why do people sweeten already sweet things? I don’t get it), so I think I did well. David had shrimp and grits – I tasted them and they were heavenly.  I also had a half glass of cabernet, couldn’t drink the whole thing.

Countdown To The Coast



One week from today, I’ll be on the road with David, heading for one of my favorite places in the world – Topsail Island, North Carolina! Love going to the coast off-season… fewer people, cool weather perfect for marathon beach walks, cheaper lodging rates. This will be our first real vacation together in well over ten years, and I just can’t wait! Thanks, Ward and family for staying at our house to care for our menagerie. We couldn’t do it without you!

There’s only one fly in the sunscreen, so to speak: How on earth am I going to stay ketosis while on vacation??? We all know that everybody goes off their diet and gains weight on vacation, right? Well, I’m determined to be the exception to the rule. How? Here’s my plan…



Intermittent Fasting!!!

Yes, I’m planning to eat only one meal a day. OK, I’ll be honest, I don’t think that’s going to be possible. More realistically, I will probably have one meal and one snack. I have no problem skipping breakfast, and for the past few weeks I’ve also been skipping lunch a couple/three days a week as well. It’s been surprisingly easy now that I’m securely in keto. So that leaves a big, fat-heavy, nutrient-dense, moderate-protein dinner at a nice restaurant every night. Since restaurants normally serve too-large portions, I can box up some leftovers for a bedtime snack (or breakfast/lunch/snack the next day). I also plan to bring fixin’s for bulletproof coffee (pastured butter, coconut oil) for mornings when I might feel a little hungry. Will I be able to stick to this plan? We’ll soon find out!

To get us in the mood, here are a few pictures I took the last time I was there, about 3 and a half years ago. (BTW, I’m sad to say that in the picture of me below, I was about 10 lbs lighter than I am now. Sigh.)
